The pizza bases are a recipe from my Mum called 'Collette's Jiffy Pizzas'. These were made every time there was a party at our house. Mum used to make big rectangular ones which she then topped with tomato puree mixed with a little pineapple juice and then all manner of toppings from ham and pineapple, tuna and sweetcorn to pepperoni and multicoloured peppers. I have varied the topping a bit and it is based on a pizza I had at a restaurant in Edinburgh called Mamma's. I couldn't have a blog without at least one pizza recipe in it as it is the firm favourite food of all the boys in my family!
100 grams self raising flour
Half teaspoon baking powder
Quarter teaspoon salt
15 grams butter
100 grams grated cheddar cheese
Eighth of a pint of milk
6 tablespoons onion marmalade (bought or homemade)
1 black pudding sausage
1 apple
Pre-heat the oven to 220 Degrees.
Put the flour, baking powder and salt into a bowl.
Rub in the butter and add 30 grams of the grated cheese.
Stir in the milk and mix to a rough dough.
Turn onto a floured surface and knead lightly until smooth.
Leave to rest then roll out the dough to whatever shape you like to fit your baking tray.
Bake in the centre of the oven for 10 minutes.
Spread the onion marmalade over the base.
Slice the black pudding and cover the onion marmalade with it.
Core and slice the apple, then place over the black pudding.
Sprinkle over the remaining cheddar cheese and bake for 15 minutes.
