Mars Bar Cake

Thanks to my lovely friend, Amy for this one.  She is currently suffering from a fractured back after a terrible accident but continues to be a wee ray of sunshine in my life - not just because of her excellent taste in cakes!

I have adapted it (as usual!) and given it a biscuit base and a dark chocolate lid but the mars bar centre remains the same as the original recipe Amy gave me.

If you are not a lover of chocolate then this is not the cake for you!!

1 large packet of digestive biscuits
250 grams of butter
500 grams of mars bars
6 tablespoons of golden syrup
200 grams of rice crispies
250 grams of dark chocolate

Put a large pan of boiling water on the stove.

Put the mars bars, syrup and 125 grams of the butter into a bowl and place this on the pan, ensuring the bottom of the bowl does not touch the water.


Meanwhile crush the digestive biscuits and melt the remaining butter in the microwave.





Mix the butter with the digestive biscuits until they stick together.

Put the biscuit mixture into a large, lined dish and press it down until it is smooth.

Place it in the fridge while you finish the rest of the cake.

Once the mars bar mixture has melted, remove it from the heat and mix in the rice crispies until the mixture is gooey but not runny.

Splodge it on top of the biscuit base and pop it back in the fridge.

Melt the dark chocolate either in the microwave (carefully) of over the pan of boiling water again.

Pour it over the mars bar base, spreading it out as much as you can.

Place the cake in the fridge for at least two hours, ideally over night if you have serious will power and patience!

Once set, slice it and store in an airtight container but not in the fridge.
