Strawberry and Lemon Tart

This started life as 'No Fuss Fruit Tart' in Nigella Lawson's 'Nigella Kitchen' book.  It's is a great book, full of fabulous recipes and written in Nigella's individual and witty style.
I adapted this slightly, mostly based on what I had in the house at the time but it worked.  In fact, I actually made this to watch the Wimbledon final back in June so this was eaten by a group of very proud Scottish people watching our new champion!


375 grams of digestive biscuits
75 grams of butter
2 x 200 grams of cream cheese at room temperature
2 tablespoons of icing sugar
4 tablespoons of lemon curd
1 lemon
400 grams of strawberries

Put the biscuits and butter in a processor and mix until they are a sandy rubble.

Press into a tin and put in the fridge.

Mix the cream cheese, icing sugar, juice and rind of the lemon in a bowl until combined and spread over the base.

Leave the tart in the fridge for a few hours, preferably over night.

Top with the slice strawberries just before serving.

    1. They were particularly nice strawberries, I got them from a wee market near where I live. I think you could try other berries with this dish though and they would work just as well. Thanks for checking out my blog, Tamara - I am just off to have a look at your recipes.
